   对农业生产的动、植物产品及其物料加工的各种技术。又称农业物料加工。农业生产的各种产物分3类:①直接为人类利用或稍事加工即可利用的、经济价值较高的农产品,如子粒、果实、蔬菜、肉等。②经济价值较次的副产品,如作物的秸秆、动物内脏和骨骼等。③农业废弃物,如动物粪便和残体等。农副产品加工按对象可分为粮食加工(见稻谷加工、小麦制粉)、饲料加工、种子加工、果品加工、蔬菜加工、油脂加工(见植物油料加工)、食品加工、酿造、工艺品加工和工业原料加工等。按加工工艺可分为:①机械加工。剔除人类不能利用的部分或改变农副产品的外形而不改其性质的,如脱壳、制粉等。②物理加工。如烘干、脱水、膨化、冷冻等。③化学加工。用化学方法改良或提取农副产品的化学成分,如棉籽油或饼的脱毒等。④生物加工。利用各种微生物或酶改变农副产品的化学成分,如发酵、酿造等。
