电磁炉的原理
    当一个回路线圈通予电流时,其效果相当于磁铁棒。因此线圈面有磁场N-S极的产生,亦即有磁通量穿越。假若所使用的电源为交流电,线圈的磁极和穿越回路面的磁通量都会产生变化。
当有一导磁性金属面放置于回路线圈上方时,此时金属面就会感应电流。因为金属面上有电阻,因此感应的电流就会使金属面产生热能,而使用此热能以煮熟食物。
    感应的电流越大则所产生的热量就越高,煮熟食物所需的时间就越短。要使感应电流越大,则穿越金属面的磁通变化量也就要越大,当然磁场强度也就要越强。这样一来,原先通予交流电的线圈就需要越多匝数缠绕在一起。因为使用高强度的磁场感应,所以炉面没有电流产生,因此在烹煮食物时炉面不会产生高温,是一种相对安全的烹煮器具。
电磁炉的特性
    1.电磁炉系利用低频(20-25KHZ)线圈之磁场,经过导磁性(铁质)锅具产生感应电流转化为热量来加热食物,能源效率特高。 
    2.务必使用铁质、特殊不锈钢或铁烤珐琅之平底锅具,且其锅底直径以12-26㎝为宜。 
    3.电磁炉附有温度控制器,可防过热,省电又安全。
