【原料】
去皮冬瓜450克，面包150克，鸡蛋2个，番茄酱50克，菜油500克，(实耗75克)，精盐、味精、面粉、白糖各适量。
【制作过程】
1.先把冬瓜切成6厘米长、3厘米宽，1厘米厚的片用少许盐腌一下，使冬瓜滗出一些水，软一些。 2.面包弄成层，鸡蛋磕入碗内，加精盐、味精，打匀待用。待冬瓜水分沥干，两面沾上面粉(稍厚一些)，再在鸡蛋液里浸一下，然后，埋在面包层中，用于按一下，使冬瓜均匀地沾满一层面包屑。 3.锅洗净置中火上，放油烧至六成热时，分别扒入冬瓜片，约炸2分钟，见呈金黄色时捞出，沥净油，整齐装在盘中。 4.用另一干净锅放中火上，放油适量，倒入番茄酱炒熟，添些清水，加白糖和适量精盐，搅匀烧开，浇在冬瓜排上即成。
