    一种二糖。分子式C12H22O11。系统名a-D-葡萄吡喃苷基-β-D-果呋喃糖苷。为最普通的食用糖。大量来自甘蔗和甜菜,甘蔗含蔗糖约15%~20%,甜菜含10%~17%,其他各种果实、种子、叶、花、根中也含一定量的蔗糖。全世界蔗糖年产量超过1000万吨。
   蔗糖为白色晶体。熔点185~186℃,密度  1.5805克/厘米3(17.5℃比旋光度!!!Z0589_2+66.37°(水),易溶于水,极微溶于乙醇。蔗糖分子中两个单糖间的氧桥是由葡萄糖半缩醛的羟基和果糖的半缩酮羟基失水形成。蔗糖没有自由羰基,没有还原性,不与羰基的特异试剂反应,在水溶液中也不产生变旋光作用。蔗糖较其他双糖易水解成等摩尔的葡萄糖和果糖混合物。葡萄糖和果糖等量混合成(在蜂蜜中存在)转化糖,比蔗糖更甜。
   将甘蔗或甜菜榨出汁液,加入石灰乳沉淀除去其中的蛋白质、胶质、有机酸等杂质,过滤后真空浓缩结晶,在分离机上分离得粗糖(即市售红糖)。粗糖再溶于水,经水蒸气蒸馏脱味和活性碳脱色,再浓缩结晶即得白糖。蔗糖可被细菌发酵,在高浓度时能抑制细菌生长,医药上可用作防腐剂和抗氧剂。
