To comply with the general development tendency of beverage, to create a new outset for the utilization of fruit in our country, the article tried to find out a process technology of the new product, fermented fruit juices and mainly studied fermentation conditions and controls of several aroma-producing yeasts and the application of the yeasts in the process technology of fermented fruit juice.
顺应饮料发展的趋势，为我国水果的消化寻找新的出路，本课题对“醇香果汁”的生产工艺进行了摸索性研究，并着重研究了产香酵母的发酵规律和在醇香果汁生产工艺上的应用。

材料：
草莓 30公克
苹果 40公克
木瓜 80公克
芭乐 25公克
葡萄 30公克
即溶燕麦片 15公克
低脂鲜奶 120cc
作法：
1. 草莓洗净去蒂；苹果、木瓜、芭乐洗净切细丁；葡萄洗净备用。
2. 将即溶麦片置于碗中，倒入低脂鲜奶拌溶后，与作法1的材料一起放入果汁机中打均即可。
备注：
葡萄洗净后不必去皮即可放入果汁机中打汁，因葡萄皮及葡萄籽含有丰富的维生素及纤维质，是瘦身美容的圣品。
