【原料】
原料：嫩瘦猪肉150克, 葱末、姜末、精盐、味精、料酒、湿淀粉各少许, 鸡蛋5个, 香油10克, 猪肉皮1小块, 花生油250克(耗75克).
【制作过程】
(1)将猪肉切成赤小豆大的丁, 加入葱姜末、味精、精盐、料酒、香油和1个鸡蛋蛋液,用筷子拌匀(如稠可加适量清水),搅匀成馅, 分为12份. (2)将4个鸡蛋磕入碗内, 加入少许精盐和湿淀粉打匀. (3)将手勺在火上烧热后, 用猪肉皮擦一下, 滴入蛋浆的1/12, 旋转手勺, 摊成小圆蛋皮, 如此做成12张. 在每张蛋皮上放馅, 揪起一边同另一边合拢粘成饺子形, 放入盘内, 用筷子从两端向中间夹去, 即成荷包状. (4)花生油入锅烧至五成热,放入制好的荷包, 炸至外酥里嫩即成. 装盘时, 中间放2个, 其余的码成一圈.
