性质:又称Q10理论。即用微生物受热死亡后的数目降低到原先的1/10所需要的时间D来描述微生物的耐热性,在相同温度下灭菌,D值越大说明此微生物越耐热。D值可用下式求得:1n(1/10)=-KD;D=2.303/K,K为比死亡速率,s-1。不同的微生物有不同的微生物有不同的K值,它因温度的增高而增大。
