苏州人爱吃鱼，不过挑嘴，有人不吃鲤鱼，有人不吃鲢鱼，唯有鲫鱼，从不曾听说有人忌口——苏州小孩学会说“鲜得来”这句话，准是在吃鲫鱼的时候。葱烤鲫鱼这道菜突出的就是鲫鱼的鲜美。在滴着酱红汤汁的鲫鱼背上，放着半寸来长脆生生的葱段。虽然不明白为什么这样就是“葱烤”了，但这儿总是人最先下箸的地方。
